Anyone know if SRAM calipers are compatible with Ultegra R8000 hydro STI's?

No. Sram uses DOT fluid, Shimano uses mineral fluid, they're not at all compatible. If you're after an alternative to Shimano calipers for some reason, have a look at the Hope RX4.0
