Wahoo BOLT - which mode to use for workouts

I'm not wishing to add in another level of setup by using the workouts created in Training Peaks with Zwift, for now I am happy syncing the workouts to my BOLT and just looking at the display.
I use my BOLT in conjunction with a TACX Flow Smart and a power meter. First step is to calibrate the Stages PM, second step is to calibrate the TACX which I do through the phone app. Once done, unlike when using Zwift I leave the app running on my phone. I then start my workout on the BOLT. All devices are shown on the device as connected.
Main question is what mode should the BOLT be set to? Should it be the ERG mode? So lets say I have 40s at 500W then 20s at 165W, I'd want the trainer to be adding resistance so I'm not spinning 130rpm to hit 500W, it should then knock the resistance off so I can spin my legs at the 165W. Got myself in a right old tangle on Monday and in the end I put it on Level 9 so I could do the hard bits, this meant I couldnt recover for the easy bits.
