Tight tyres

I have some new handbuilts with a Kinlin XR31 rim, and on the rec of my LBS bought some Roubaix Pro tyres.
2 problems - i have barely enough frame clearance which I could just about live with, but getting the tyres on and off is a firkin nightmare. I'm no Chuck Norris but have reasonable technique and never suffered like I did with these.
Any suggestions for an everyday tyre for riding around Devon that might go on and off the rim a little easier and offer a smidgin more clearance on my PX RT58?

What's size are the roubaix? I ran conti grand prixs in 25mm on my winter bike 2016/17 and they didn't come up too big compared to say the gp 4000. They also were a lot tougher in my opinion than gp four seasons. And can normally be had for around £22 a tyre online. These were fitted on mavic open pro ust and I didn't have much trouble getting them on or off? Were you getting the roubaix pros best into the middle channel of the rim before trying to mount the other side of the bead?0 -
They are 25s (marked as '23/25' but the 23 just refers to the width of the tread I think). The rim doesn't have a very deep channel.
I'll give the Contis a try, thanks0
