Using triple shifter with double chain ring setup

I am helping my son do up his MTB. It's 40 years since I worked as a bike mechanic. Things have changed - and I'm a little rusty! He currently has Shimano ST-EF510 brake/shift levers, but they are both broken. He has a double chain ring, not a triple, but all the ST-EF510 sets I can see are for triples.

Two questions. Can you use a triple shifter with a double chainring? And - does anybody make brake/shift levers for doubles (2 x 8) for a reasonable price?

    Yes and probably no. They are outdated.

    Just use the limit screws to stop the mech overshifting.

    Until the advent of dual purpose 2x and 3x shifters, all I did was adjust the limit screws on the front mech. This sounds simple (and is very simple). I didn't have to do anything to the shifter. It worked perfectly! :)

    Yep, I always used to use triple shifters on a double.

    Get separate brake and gear levers, I doubt you'll find anything 2x8 that's not terrible, and it means you can replace parts individually in future.
