how much climbing in a gran fondo?

hi all. i'm a fat daddy, about 93kg. but i'm in decent condition, i can hold 40k/h in a group for awhile. i'm doing a gran fondo in october and i have 2 options:

80km with 1200m of climbing

or

130km with 2400m of climbing

i've done two 300m teeny mountains (category 3 paris mountain in SC and latigo in LA) this year and it's difficult. how ambitious shall i be?

any thoughts?

    Go slow enough and you can do any Gran Fondo.
    Push too hard and you will blow out. All about the pacing.

    Go for the big one but pace yourself, try not to fly off following the chaingangs. Make the speed up on the downhills and go steady on the uphills. Remember there not races.
