Canyon sizing for Aeroad

Hi,

looking for some feedback regarding canyon sizing. I've checked their PPS tool, but any further help be great.

My stats are;
Height 6ft (183cm)
inseam 86
torso 66
shoulders 48
arm length 66

It recommends a M, but any feedback be great,in particular stem sizing as ive read from a few posts that going for a 120mm stem worth doing so rather than the standard 100mm.
