Narrowest tire for DT Swiss XM 481

Hi,
I have a pair of DT Swiss XM 481 and I dream about using them on my fitness bike (Canyon Roadlite 2016 on which I've installed dropbars 2 years ago). I know every tire get wider on wider rims. I am a big fan of wide rims since they give precision and of wide tires for the comfort and low rolling resistance.
I am looking at the following options of SCHWALBE G-ONE SPEED:
40-622 (28 x 1.50, 700x38C)
35-622 (28 x 1.35, 700x35C)
Would it be too dangerous to run these tires on such wide rims? How wide would a 700x38C get on this rim?

I'm just wondering if I can run 23c tyres on 17C Fulcrum Racing Sport DB & Mavic Aksium Discs.
Mavic say "Recommended tyre size: 25 to 32mm"
but also a little inconsistently "Max. Pressure: 23mm 8.7 bars - 125 psi, 25/28mm 7.7 bars - 110 psi"0
