New bike: recreation/town/occasional long distance

My beloved Whyte Stirling bike was stolen and I must now find a new bike.

I generally use my bike for a 12 mile recreation spin round some London river paths and parks, trips into Central London from time to time and occasional long distance. I try doing London - Cambridge once a year. I've done London - Paris and London - Antwerp. Speed is not the most important thing but I still don't want to be left behind and I like making hills as easy as possible especially when the panniers are loaded. I like something as light as possible. I will fit a pannier rack and also the chunky mtb style mudguards. I'm prepared to spend up to about £1100

The bikes I'm looking at are below and any advice would be appreciated including on bikes I have not mentioned. I'm inching towards the Cannondale but I'm not sure. Thanks
