Road bike sizing (Evo2Max)

I'm about to buy a Evo2max bike. https://www.evo2max.com/products/road-bikes
I'm 180cm, with 87cm inseam. I currently ride a Cervelo S5 size 54. Stem 105cm. It's perfect. I'm now torn between 54 and 54 . It really seems like 56 is a closer fit to S5 size 54. But I'm not sure. A guy at Evo2max is 181 and rides a 54 with 120 cm. I'm not sure I want 120 stem.
The Evo 56 is a tiny bit larger then Cervelo 54, and Evo 54 is a bit (and probably a bit more) smaller than Cerelo 54.
Any thoughts?
