LEJOG/JOGLE bike

So, I want a new bike, I want to do JOGLE, I thought I may as well use JOGLE as the excuse for said bike.
Anybody any suggestions for the perfect JOGLE bike?
I am thinking I will probably be carrying sleeping bag, bivi bag, thermarest, shorts, T-shirt, Waterproof jacket, Warm Jacket, Flip-flops, Suncream and a very small bottle of laundry detergent.
Anything I should add to this list?
My initial thoughts regarding choice of bike were that a gravel bike would be a nice thing to have, good fun for commuting and feel a bit less delicate than a full on road bike but more hand positions/more aero/easier to cover big distances than an MTB.
I've recently seen Giant Toughroad SLR GX1 in LBS and must admit I am tempted...
Any alternative suggestions?
