Can the Wahoo Element be used off road for mountain biking, for tracking bridleways?

Yep, use it often for this. Anything that's marked as a path/bridleway on an OSM map shows up. Inevitably there will be some smaller trails not marked, but can still follow the track easily enough.

What he said. I use mine as much on the MTB as on the road bike (handy having a stem mount on the MTB and the out-front mount on the roadie). Not only will it show you pretty much any rideable path, it'll also guide you down them if you set the route up to do that.

On a couple of other points:

    - if you are following a route and go astray, it'll tell you almost immediately that you are off-route but continue to track where you are and where your route is - you can zoom out if needs be to see where the route is and how you can get there

    - ELEMNT vs BOLT? Don't forget the aerodynamics of the Bolt and its mount.

I looked long and hard at all the options before going for the Bolt - I haven't used an alternative (other than the Wahoo REFLKT) so can't compare, but I am chuffed to bits with the Bolt.
Cube Reaction GTC Pro 29 for the lumpy stuff
Cannondale Synapse alloy with 'guards for the winter roads
Fuji Altamira 2.7 for the summer roads

Ordered a Wahoo Elemnt Bolt, which I received today. Was super easy to set up via the app, and used it on my commute home with no issues. Really like it so far, and being able to do everything via the app is blissfully easy and convenient.
