Canyon experience in the US

Hi, looking to find out peoples experience with Canyon in the US. I’ve narrowed my search down to spec roubaix elite with 105 and hydro discs and the Canyon endurace sl 7.0 also with 105 groupset and hydro disc (after a sale on the roubaix, the canyon will be around $200 cheaper). Never seen the canyon endurace in real life (only ever seen one Canyon on the road around the mountains of North Carolina).
I’m 34, 6’3” and 180 lbs. I ride between 30-60 miles a week. About 90% hilly.
Thoughts would be appreciated
