Newbie with a £500 budget. Help!

Hi Bike Radar thank you for allowing me to join this forum. Last year I was cycling for fitness and this year I am going to do the same but I want to enjoy riding in off road. I’m now stuck with trying to buy a half decent mountain bike with the above budget.
So I was looking at the Giant Talon 2 2018 mainly for the shimano gears and the 2 gears up front and the hydraulic brake discs. I was wondering if anyone could recommend anything cheaper for a hard tail with a similar setup or a cheap budget full suspension mountain bike.
It seems I may be asking for a lot here but I am sure there are a lot of mtb users here that has experience on different mtbs.
