What / How Much Difference In Tyre Width

What's the difference in tyre width make ... I'm guessing the wider they are the more forgiving they'll be on rougher ground and the narrower the better for road but if we're talking about a 29er and the choice of widths is 2.1 vs 2.25 am I even going to notice it??
My riding's split over flat terrain with about 60% tarmac 38% gravel path and 2% mud ... would I be best off with the narrower tyre for that sort of split?
I generally run them at about 50 psi as there's quite a bit of road.

If you are using 50psi there is little point using a wider tyre as the pressure will mean you get little in the way of extra grip.Currently riding a Whyte T130C, X0 drivetrain, Magura Trail brakes converted to mixed wheel size (homebuilt wheels) with 140mm Fox 34 Rhythm and RP23 suspension. 12.2Kg.0

(bigger tire means less deflection - less drag on tarmac)
bigger gives better cusion, better grip, you can ride with a little lower pressure, but also quite often they are heavier.
maybe consider gravel bike?0
