Want to upgrade

Hello, I use a Devinci Hatchet gravel bike with 40mm tires. For some reason since I've been riding it I do not use it for it's purpose, I ride to the F1 track do fast laps, sometimes sprints and cardio work I guess I just found what appeals to me ride style-wise. I use it as a supplement to my 5 day/week weight training.
Since this bike is not ideal to reach my potential on the track. My options are to swap wheels for 25mm and a casette. Or add a second bike to my stable . My budget is $2000, it does appeal to me the idea of just taking a second bike off the wall depending on what ride I feel like doing. Opinions please.
Btw the brands available nearby are specialized, cannondale, trek , Argon and Giant.
