N+1 (next bike purchase)

Needing to add to my current collection of bikes ( Dogma F10, Schwinn single speed, Cervelo P3 ). Mostly just something fill all of those gaps, basically just off roading/bike camping.
I have narrowed down my requests/requirements for said bike to.
- At least 40mm tire clearance.
Yea thats really all I have to have. That being said there is a lot of things I would like to have.
- 650b Tires
- 3 water bottle cages
- drop bars.
- under 3000 USD$
Basically an Open U.P., would be perfect besides for cost. A Specialized Diverge would fit the bill, if I could get my hands on one.
Any help in figuring out other bikes that meets these specifications would be lovely.
