New MTB, budget £1000-£1600

Hi,
I am in the market for a new MTB.
I mostly am into cross-country, thus no "crazy" downhill, or too diffficult tracks.
My budget is between £1000 and £1600, and currently am stuck between:
Canyon Exceed 6.9 Pro Race

And its slightly fatter little brother:

While the price tag of the Exceed 6.9 SL definitely is a bit more attractive, I am very keen on riding with 11x1 rather than 11x2. Also it has slightly better wheels and af full GX groupset rather than a mix of XT and SLX. The fork is also lighter though I am not certain whether it is actually a better fork?
Is the Pro race worth the extra £400 or would I make a better deal with the 6.9 SL and at a later stage convert to 11x1?
Can you recommed other bikes, which would be better in my price range?
