Aeolus 3 Pro Tire Selection?

I'm hopefully picking up a new bike next week which will have my first set of carbon wheels, the Aeolus 3 Pro. With the rim measuring 19.5C the supplied tires are 28C and I wondered if anyone had changed these for a 25C tire and if so what comparison can you make.
My research suggests staying with the 28C for comfort and comparable speed, however real world experience would be welcome.
Also are you running tubeless?
