Bikepacking UK, France?

I'm living in London for the next year and keen to do some kind of bike packing trip. I'm just going to basically take a big Apidura saddle bag.
I was thinking something like London to Cornwall, or Paris to Provence. My knowledge of Europe for cycling is pretty weak, are either of these routes scenic, and have plenty of nice little towns to stop off in?
Also open to other suggestions. Are there any classic long distance routes which are good to tick off?
Still unsure whether i want to do UK or France.
