New bike advice

Been looking at a new bike in the region of £2.5k and seem to have narrowed it down to...
Canyon Ultimate Aero:

Or a cervelo R3:

Does anyone have any experiences with the two bikes or could recommend anything else.

I ride about 100 miles a week predominately on my own in a flat area but have previously done events like the Fred and will be doing more in the future. Not that interested in discs as I have a gravel / cross bike.

    I've just sold a Canyon Endurace as it was a little too relaxed.

    You cant really go wrong with either of those bikes they will both be great, the only real difference is that the Canyon has a much nicer wheelset so is better for the money since you would likely upgrade the wheels on the Cervelo anyway
