I can do the front fine but the rear wheel is being a pain to true as it has 2x the amount of spokes on one side as the other, and I can't for the life of me manage to fix it

Truing a wheel can be difficult if the spokes/nipples are an awkward design but most are fairly straightforward. You haven't given much information but do you actually know what you are doing and have the right spoke key/blade holder, etc? Many folks get the turns completely wrong (wrong side and/or wrong direction) and only make matters worse not better. The other key issue is that the nipples have become seized and won't turn.

Yes I can do the front wheel no problem but back uses bladed spokes and an awkward spoke configuration
