Commuter tyres on a 29-40mm ride rim?

Hi.
I have a bike with a 39-40mm inside diameter 26 inch rim, with kenda kiniption 26x3 sized tyres on it which aren't very good.
I'm looking for a tyre which will be more suitable for tarmac commuting. The only thing I can really find are Schwalbe Big Apples which come in 26x2.35. However would these be too narrow for the width of my rim? From my research I'm getting mixed opinions on the downsides of narrow tyres on wide rims.
Can anyone offer advice? Thanks

    2.35" (~60mm) tyres should be absolutely fine on ~40mm inside rim width wheels, as a rough guide, ~1.2x the rim width should be fine as long as you don't try to use low pressures.

    Given the above, I would consider the following Schwalbe tyres for tarmac commutes...
    2.35 Big Apples
    2.0 Kojaks
    2.0 Land Cruisers (great for a bit of mild off-road too)
    2.0 Marathon Supreme
    etc.

    I bet they are 559mm inside diameter (give or take).

    As above something 2" will be OK, in theory 1.85" would be but I see little benefit in pushing it that far.
    Currently riding a Whyte T130C, X0 drivetrain, Magura Trail brakes converted to mixed wheel size (homebuilt wheels) with 140mm Fox 34 Rhythm and RP23 suspension. 12.2Kg.

    Sorry I noticed the typo in the title, they are 39-40mm rims.

    I know its a very rare rim size to have a plus size 26 inch rim. But ive heard narrower tyres on these rims can mess up the tread pattern and expose the sidewall, or will I be fine? Current tyres in the photo are 26x3 kiniptions

    As above, nothing has changed, 2" tyres will be fine, at a push 1.85" but I wouldn't bother.
