I have a carbon steerer and aluminium stem on my ride.
What do I use as a grease to stop creaking when all cleaned: My Park Polylube 1000 or a Carbon Asembly grease?

I should not creak when assembled dry. If the stem slips or play develops uses carbon assembly paste.
