Brake Bite

I have a new bike with DB-1 hydraulics. As it has been ages since I had a bike it's my first time with disc brakes.

Riding it for the first time today and noticed that the brakes are good, but, almost feel very much like fresh rim brakes. For example, I know skidding is not needed at all but a hard pull did not make the rear wheel lock up.

Is it just that disc breaks need time to bed in?

They do need time to bed in, yes, get it upto speed and pull on the brakes hard without locking up, repeat about ten times, or just ride it more!
