Replacing Canyon Ultimate H36 aeroish bars with normal ones

Hi all,

So I just got my new Ultimate CF SL 2017 frameset. It's pretty sweet but sadly Canyon's stock fancy aero bars don't fit me so I'd like to use something more conventional (as per their base models). I've discovered they use a 1-1/2" steerer so that's my choice of stems cut down, but they also use an odd teardrop-shaped spacer above the headset. The spacer appears to be aluminium and is clamped to the steerer with a small grub screw.

Firstly, what does this spacer do exactly? Is it part of how the bearing assembly is preloaded or is it simply to keep the other teardrop spacers in the right orientation?

Second - and more importantly - I need to replace this spacer with a more conventional item (like the flat flying-saucer shaped headset bearings cover on my other bike) in order to be compatible with the cylindrical spacers I intend to use. Any ideas what precisely it can be replaced with? As it's part of the bearing preload I'm guessing it'll have to match the size well.

Third - can anyone recommend suitable stems, caps and spacers? I'm probably going to go with Giant OD2 but recommendations always welcome.
