Working away from home for a week - found a gym with old style Wattbikes.

I normally train in my garage using a Kickr and Zwift, and have obviously been getting outside a lot more recently now the weather is better.
I generally eat censored and drink too much when in a hotel for a week, so want to make sure my training doesn't suffer too much - what would be the best way of this? I don't think I will be able to Zwift or use Trainerroad with the Watt bike as it's one of the older ones. Best bet just to write an interval workout down, old school? Would the only way I'd be able to track on Strava is use my bike computer (a Wahoo Elemnt Bolt).
