I normally train in my garage using a Kickr and Zwift, and have obviously been getting outside a lot more recently now the weather is better.
I generally eat crap and drink too much when in a hotel for a week, so want to make sure my training doesn't suffer too much - what would be the best way of this? I don't think I will be able to Zwift or use Trainerroad with the Watt bike as it's one of the older ones. Best bet just to write an interval workout down, old school? Would the only way I'd be able to track on Strava is use my bike computer (a Wahoo Elemnt Bolt).

I think a watt bike will broadcast power over ant, so nothing to stop you getting something like a wahoo ant key and running trainer road on an iPhone or iPad. You can then export into strava or just run starva at the same time. Or take your bike computer as you suggest and pair it to the watt bike to record.0
