Upgrading?? Lovely Bianchi Via Nirone 7 FB Can I???

This is my Bianchi via Nirone Liquigas team edition bike, I think its a 2007/8.
It has a Campagnolo system:-
Crankset: Campagnolo Race Triple 10speed 30-42-52t
Sprocket/Cassette: Campagnolo Mirage 10speed 12-25t
Flatbar Shifter: Campagnolo Veloce light 10 Speed
Can I put on eg an Ultegra Cassette 12-30t http://www.wiggle.co.uk/shimano-ultegra ... -cassette/
or 105 Shimano 11-28t (Basically a bigger climbing gear).
I am struggling to find a Celeste coloured saddle like this one from the original version:-
It has a Riser MTB Flat Bar, nearly 710mm wide. Do you recommend Riser Carbon Fiber bars? I feel it may be too wide, shouldnt it be less wide. It rides very well, yet I have a feeling the bar was an odd choice for a hybrid.
The bike is extremely comfy, however, now it needs some TLC. A new KMC chain, new cassette and wiring.

You'll need a Campagnolo cassette to go with it, as your wheels use a different freehub to those for Shimano/SRAM cassettes.
The Campagnolo Veloce comes in a 13-29, which is pretty close:

For 12-30 you'll need a Campagnolo Centaur cassette, but the price is eye-watering for a cassette:

Regarding the saddle, I doubt if you will get one identical, but have a look on the Fizik web site they do custom made saddles

Nothing wrong with riser bars ...they are just another option to gain height for your hands without the use of more stem spacers or a steeper angled stem.
Regarding the length ... unfortunately the vast majority of mtb bars are now in 700mm and up
My hybrid came with a 620mm I think, which even that I found too wide for road use.
Depending on what it's made off you can cut them down "safely" to size ... or you can cut them down just to size ... i.e. Some carbon bars have reinforced ends and specify how much you can cut off and still have a useable reinforced bit0 -

OMG that price is eye watering for the Centaur cassette, holy cow! Yeah the 13-29t could be a better choice.
Is hub changing hard? Sorry for such a newbie question, it could be cheaper replacing the freehub and I found these 3 choices:-

I actually love the rising bars. I just thought they maybe too wide, however, as it rides well I have to say they are great... I have another hybrid with tiny 550mm maybe. I may reduce to 620mm like you. I cant find the amount of rise on it. Its something called Oxygen Driver, I never heard of them. I am considering getting some carbon fiber.0 -
The seatpost itself is 31.4mm. Its impossible to replace with carbon fiber. Although people say to buy shims, i googled an hour and found nada ... maybe not looking with the right words for a carbon setup.0

As it's a triple (correct?) I'd have thought that changing the rear cassette would be of limited "upgrade" potential. The triple should give you all the gears you need?
Lowest gear = 30/25 = 1.2. Highest gear = 52/12 = 4.33. Those ratios, and the ability to get lots more in between, should allow you to climb pretty steep stuff and descend pretty quickly.
If however, you need more help climbing, then the 13-29 seems to be the best option.
Also when you say wiring; I presume you mean cabling (gears and brakes). If you are going to do this yourself, please do not skimp on cable cutters - get a good set designed for the job in hand. The usual suspects apply here - Park Tool, Pedro's, etc. I have a set of Chain Reaction's in house brand and they are decent enough.
Also I recently re-cabled with the JagWire Road Pro kit. This is a pretty good option as all the accessories are included - frame protectors, ferrules etc. etc.

Thanks.. I ended up buying the Campy dearer one.
I have bought in addition more goodies:
1. Changing handle bar to carbon 600mm
2. Seatpost to carbon 350mm 27.2 with a shim to 31.4mm
3. Carbon stem
4. New Campy 12-30t cassette, the dearer one noted in the post
5. New cables and gear lines ultrashift kit by Campy
6. Bianchi tarty bar end logo in celeste
7. new Bianchi grips in foam with a lock on
8. New Campy chain
9. Celeste touch up pen
10. Bianchi cup holders in black with celeste accents
Not bought tyres yet, as the bike is mostly celeste, it may not look nice to use Vittoria Celeste tyres, as it will no longer look like an accented colouration. I have seen an overkill when that was done.0
