How long do you guys find good quality chamois to last before it loses its functionality? Is there even life expectancy for chamois? I'm talking top of the line stuff for respective brands.

Years. Its usually the lycra that goes first in my experience.

Yup - as above. It'll look worn but still do the job whereas the Lycra will wear out first.

I've just binned a couple of pairs of bibs as the chamois seemed compressed and no longer comfortable, both in excess of 7 years old.

What I did do on the winter bib longs is unstitch the chamois so they can be worn over bib shorts, so a new lease of life :D
