Which tyre size?

I have a hybrid bike with 700c wheels with a 16mm internal rim measurement (700x16). It currently has Schwalbe Marathon Plus 38mm tyres on but they are all over the place one sandy, gravelly, muddy surfaces which I have to travel over quite often; they are definitely road tyres only. Don't want to go for the Tour version just yet. I'm looking at the Schwalbe Land Cruiser in either 35mm or 40mm but don't know which would be better for the 16mm rims Would the 35mm tyres give me me a flatter tread profile on those rims or would the bigger ones be better all round. I'm quite new to cycling as a hobby so not too up on the practical differences.
