Winter Commuting Bike

Hi,
I am thinking of getting a winter hack for commuting. I currently ride my Canyon 29er with massive mudguards and rack but I have to keep taking them off when I want to go MTBing.
Any thoughts? My commute is mostly disused railway with muddy puddles and tarmac cyclepath.
I will need to able to fit mudguards and rack. I am even considering hub gears or singlespeed because my gears struggle to cope when constantly covered in mud.
I don't want to spend much, maybe £300 - 500 max.
Mick

Have a look at the Planet-X London road, they are currently doing an offer at £200 off if you build it yourself, you could single speed it with a tensioner, sell the unused bits as brand new!Currently riding a Whyte T130C, X0 drivetrain, Magura Trail brakes converted to mixed wheel size (homebuilt wheels) with 140mm Fox 34 Rhythm and RP23 suspension. 12.2Kg.0
