Bike replacement - help please

Evening all
Could really do with a steer on bike replacement and sizing following mine and my wife's mtb's being stolen. I am limited to choice through insurers but have narrowed it down to a Giant Fathom or Cube ltd race, both on 27.5. They are both 2017 bikes.
I've always had a more cross country set up with occasional fast trail use, never ridden 27.5 but 26 inch doesn't seem to exist anymore. I'm 6 ft, largest size for the cube is 18" and the fathom goes up to a large which I presume is 19" which is what I'd normally go for.
Question is would the larger wheel size mean the 18" falls a bit bigger for me, concerned the 18 might be too small although spec seems better

No nothing about giant sizing but I have a cube I am 5.10 and ride a 18 which I do find it is on the small size I would for go for a 19 inch0
