Can you please help to decide if I'm making the right purchase, Don't want to push budget over £110, all this would be with 1x possibly 2x, not sure if the medium cage will work 2x if I decided to do that.

Medium cage will work with some 2x set ups - depends on 'chain wrap capacity' (one to google).
For a 1x set up there is nothing wrong with those choices. Definitely a good move going for the XT shifter - it is superb. The cassettes are not the widest ranging, though you can add expander cogs with some fiddling (should you want more range). Or consider a Sunrace MX or MS3.0 -

Yup, the MX has some tweeks and an aluminium largest sprocket.Currently riding a Whyte T130C, X0 drivetrain, Magura Trail brakes converted to mixed wheel size (homebuilt wheels) with 140mm Fox 34 Rhythm and RP23 suspension. 12.2Kg.0

Yes, though you may need a longer b tension screw.0
