When installing a new hanger on the mech and frame, is it wiser to just grease the threads or should it be locktite?

Just used grease but thought i'd ask in case I was wrong, only takes a few seconds after all

    Neither.
Correctly torqued it will be fine.

Use grease and due to the reduced thread friction the torque setting needs to be reduced to get the correct bolt tension and its possible to over tension a bolt.

There were no details regarding torque, so any suggestions before I go for 7?

    Cheers

Is it Shimano, if so their documentation does specify a torque, haven't checked SRAM.
