Currently running Michelin pro4's in 25's and roll/feel great but do fit very snugly in my seat stays and on the odd occasion need to get off and re centre by rear wheel due to rubbing. Any idea on comfy fat 23's or skinnier but retain the comfort 25's to look at?

I think some manufacturers (conti and specialized?) do 24mm options.

There's a site that measures tyres for rolling resistance etc. and they measure and weigh the tyres so that may give you a comparison - although tyre width will vary depending on the rim they are fitted to.

On that site, 25mm Michelins come up at 28mm wide whereas 25mm conti gp4000s and schwalbe one v guard come up at 27mm wide and schwalbe ultremo zx come in at 25mm wide.

Obsessed is a word used by the lazy to describe the dedicated!
