Cycle to Work- Difficulty picking a bike

Hi Everyone,
First of all want to introduce myself. I am a new rider, or shall I say, will be when I purchase my bike.
I am going to be going through the cycle to work scheme in the coming weeks, full prepped on the process, savings etc but having a little difficulty with choosing the bike.
Background
Planning to start commuting into work with a 10 mile route there and back around 3 x per week initially.
Short guy 5ft 5, and looking for a bike to be able go off road and on the road.
During the weekends the plan (weather permitting) is to head up to the coast on mainly cycle tracks with a little road cycling.
interest
I have looked over the differences in cycles but to be honest I don't know a great deal, fully committed to this and can't wait to get started
advice and bike suggestions via shops and searches
Few bikes I like, I am looking for ideally a road/cyclecross bike as I want something light weight, something I can go fast on and be able to go off road if the route takes me that way.

Probably should mention my budget is under 700 but ideally I would like something between 400-500 but all depends on what people would recommend.

Which cycle to work scheme? That may well restrict your choice. Are both those bikes definitely available on your scheme?
For commuting I'm a fan of disc brakes for the better response in wet weather, but that's a personal thing.

The scheme is through enjoybenefits.co.uk/CycleToWork. Unfortunately after speaking with them I can't get a bike through Decathalon. Its a shame because there is a great choice.
I was looking into the 500SE road bike. Looks great, and heard great comments about them.0 -
Surely the Defy is more like an out and out road bike (so offroading - especially on NCN1 north of Newcastle, south of Berwick might be a bit sketchy...
If you're wedded to Giant then an AnyRoad or Revolt would be a better fit for a "go anywhere within reason" bike?0 -
I rang tredz for a bit advice on the way back from work.
He advised on the following bike. Looked over the reviews on evans and tredz and looks a smashing bike. Both have discounts on due to the new range coming in within the next month.

From Evans, I would be looking at the Pinnacle Ramin 1 (2015/16) and the 3 Plus 2016, if looking at a rigid forked mountain bike.
