Do you guys recommend just leaving your cycle computer on your handlebars and trusting the "locking mechanisms" some devices have to avoid theft? or is it just safer to take the thing off and carry it when your are away from your bike.

If it isn't screwed down securely and possibly glued on, someone can and will take it.

Why leave the computer? What would you discuss at the cafe stop??

If you're doing sportives etc, don't leave it on the bike there while you're at the feed station or using the toilets. Thieves lurk everywhere and a cycle computer is easy enough to just slip in a pocket. If someone is dressed in lycra near a bike, who is going to bat an eyelid? Nobody.
I ride a bike. Doesn't make me green or a tree hugger. I drive a car too.
