I am upgrading my current 105 10 speed to a new 5800 11 Speed groupset. My current wheels have Superstar Components hubs - will the existing wheel be compatible with the new 11 speed cassette?

If the wheels are reasonably new, ie less than 2 years old, then they should accept an 11spd cassette
