Just building up a new bike. The frame I'm using (Dolan Etape) doesn't have threaded fittings on the downtube for inline cable adjusters, so I'm wondering if I really need them or if anyone can recommend suitable unthreaded adjusters.

Probably not critical for the rear derailleur cable as all your needs are met with the barrel adjuster on the rear mech. However it is certainly very useful if not mandatory for the front derailleur cable. You could source an in-line adjuster such as this

Having recently built two bikes using the latest Ultegra and 105 set ups, I can tell you, you will definitely need an inline cable tensioner on the front derailleur set up.
It is impossible to get sufficient cable tension without one.
