Looking to get Campag Zonda's and also try out 28 mm tyres. Ok I know I have to be careful with regards to the rubbing on the underneath of the brakes but anything else I should look out for???
looking at Conti GP 4000s, GP 4 seasons or Gatorskins

    Sheldon says this is ok:

I reckon it should be ok but you are getting close to the limits with regards to tyre handling, irrespective of whether the tyre will safely stay on the rim. I have recently found some trusted 25s to be a bit skittish when run on a sub 14mm internal width rim so running 28s on a 15 may have similar issues. The drier roads (and the loss of a slimy layer of salt) should help though, as well as dropping a few PSI, just take it a bit easy on the corners until you know how they will handle, particularly at the front.

I use Zonda`s with Michelin pro endurance 25 which come out at around the 27 mark and the handling and comfort are both very good.
