Just wondered if it was possible to swap my 105 10spd shifters for my 7900 DA ones without having to strip out all the cables. Is there a quick release system or way to remove the cable without pulling it all the way through in reverse ?

If you're installing new shifters it's a perfect time to install new cables. It's amazing what difference a set of new cables can make. You don't realise the slow deterioration over time from old cables. Especially going to Dura-Ace as you want them working perfectly.

And in any case the cables that come with Dura Ace are fancy low-friction coated ones, so it would be a shame not to use them.
