Digital Cameras Setting , GoPro & bike races

I'm planning on taking in a fair few bike races across Europe this year and and looking for some thoughts on how to capture them on camera. When it comes to digital tech I'm all (most) the gear....no idea.

That said, I don't want to become a slave to the camera and miss the moment with my own eyes.

I own a half decent SLR and a GoPro Hero4 Silver with tripods, and most mounts under the sun (or should I say a £20 accessory pack from Amazon)

Current thinking is to get the GoPro mounted on a 4' high tripod on on the side of the road with on the 1080p 60FPS setting and record - thinking this should be decent quality but also able to slow the footage down sufficiently to maybe take some decent stills.

Then get the SLR on the 'sports' mode setting at 45 degrees and just press and hold when the riders come past and hope something decent comes out.

Any thoughts?
