Need a new wheel set for my winter bike and just seen both of these at less than £70 for both wheels. Anyone have a view on which is best, or is there little difference ?

Well I have 501s on my winter bike and RS10s on my summer bike. TBH I can't say I can tell the difference when riding.
The 501s have more spokes, so they'd be less likely to buckle to an unridable degree if one went ping. Mine have plain gauge round J-bend spokes too, so easier to obtain if required.
RS10's conversely have fewer, bladed straight pull spokes. Can be tricky to find if you need one. And your rear wheel will go pringle shaped if you snap a drive side spoke. I'm assuming they are a tiny bit lighter.
Bearings are the same on both wheelsets.
You sure they are RS10s? Mine are nearly 9 years old. They were superseded by the 11 speed compatible RS11 some time ago. There's a newer, budget RS010...0 -
if you are looking on Ribble then the ones they have for £70 are RS010 which are the newer 11 speed versions of the R501s.
If so go for the RS010swww.conjunctivitis.com - a site for sore eyes0 -

+1 - they have a sensible number of spokes which I feel is a good thing in a winter training wheel.0 -
