I have been bought some Northwave Jet 365 Touring Shoes for Christmas. Which pedals and cleats would be compatible with these shoes considering I would like to use them for road cycling?

From the picture of them on Pro bike kit they look like they are Shimano SPD compatible and any other pedal/cleat system that uses two bolts only.

I'd say go with Shimano M520 pedals with those. They are reasonably cheap and work / last well. You can get "better" SPD pedals at a cost but you're just talking about weight savings

For SPD on a road bike I think the touring style are much better as you get more foot support.
There are a few different models. I have the A520 on my bikes.
