5 speed to 7 speed - non-indexed

howdy bike peeps

I have a Bianchi Sprint that I am looking to recommission for mooching about on.
It currently is a 10 speed, so has a 5 gear rear cassette fitted with un-indexed downtube shifters.
I was thinking of swapping different (better) wheels on it and I have one with a 7 speed cassette fitted.

Can I just slap on the 7 speed wheel without trouble? My guess is the un-indexed shifters will still work, because the 7 speed cassette is narrower with a narrower chain but the derailleur 'sweep' will be the same (just with more gears to choose from within that 'sweep')

I apologise if this is a silly question. I'm new to the realm of modifying bikes.

Just try it. My guess is it will work fine. I changed from 6 to 7 on an old Elswick and did not even change the chain (just the block).

The only problem might be the rear frame spacing which likely is 120 mm with 5 speeds.
7 speed needs minimum 126 mm.

    I'll give it a whirl...
