Winter XC holiday -Spain? Morocco?

Looking for help with a winter holiday in November-ish.... ideally for winter training...
Not keen on technical descents..
We're looking for a more cross country type trip - single track climbing, decent number of miles each day - likely to take hardtails or short travel FS.
Any ideas for companies or locations? Spain? Morocco? Any suggestions?

    I'm also looking at doing something like this but everywhere seems to stop in November and December and starts back up in feb-march..someone had mentioned Sierra nevada.

    Sierra nevada is a bit steep an is better for skiing this time of year.
    ski season starts end Nov.
    look at other places in andalucia like mijas or Fuengirola.
    Some fantastic single track and everything in between. Most teams of all disciplines and countries come here to train so u can't go wrong.
    loads of cheap flight,s warm weather, and plenty of trails
