What BB / crankarm tool do I need to remove these two things?
I have BB tools for square taper but not the same type, the middle bit just goes all the way through and doesn't rest on the BB to push off crankarm.

Looks like Shimano Octalink. As you've found you need a little insert for your crank tool; mine came with one.

Have a read of

Although they obv recommend buying their Octalink specific tool, they also describe the Octalink self extracting cranks. Did yours have a little cap over the retaining bolt? If so, replace the bolt, screw the cap back on, then undo the bolt again. As it presses on the underside of the cap it will pull off the crank....0 -
To clarify that isn'y Hollowtech (which is a means of making hollow canks arms) nor Hollowtech II which is external bearing bottom brackets.Currently riding a Whyte T130C, X0 drivetrain, Magura Trail brakes converted to mixed wheel size (homebuilt wheels) with 140mm Fox 34 Rhythm and RP23 suspension. 12.2Kg.0

Since it says Hollowtech on the crank arm and the large S looks to be the start of SHIMANO, I suspect it is the former.
But it isn't a Hollowtech BB, it's Octalink.0
