aware pressure limits on certin wheels but just wondered whether it would be daft to put Conti 28's on some Shimano's

Should be fine- I'm running Michelin Pro 4 endurance (technically 25mm but come up closer to 28) tyres on my Shimano R500/ RS010 wheels and they fit fine- I think the Shimano rims are reasonably wide to begin with- or at least they are compared to the stock wheels that came with the bike!
28C tyres won't be a problem at all on them.0 -

Max is 28 as long as you have clearance on the frame.0 -
