Shimano R685 vs R785/RS505 Disc Brakes

Hi,
I'm wondering what the difference is between the R685 Disc Brakes and Levers are compared to the R785 Disc Brakes and RS505 Levers.
The reason I ask is that the 2016 GT Grade Carbon 105 is going to be R785 Disc Brakes with RS505 Levers and in 2015 they were both R685. The 2016 Ultegra will remain R685.
Downgrade, upgrade, side-grade?
