Seeking Multi-Purpose Road/Cross/Adventure Bike

Hello! I've been lurking here for a while and decided to ask your advice.
I bought an excellent commuter hybrid (Devinci Wellington) a few months ago, right before I started to get into cycling recreationally. Riding 70+km, with a group, on flat bars and with a MTB groupset is uncomfortable.
So I sold it! And now I'm trying to figure out what to do next. I've compiled a list of options that seem to cover the bases (see below).
My budget is... well, preferably under CAD$1200, but more realistically under $1500.
I'm asking for a lot out of a bike, as I'd like to be able to occasionally take gravel/dirt/single-track routes, in addition to both 70+km road rides and my daily 10km urban commute. I like the Cyclocross-inspired trend, with disc brakes and slightly relaxed geometry compared to serious road bikes. I also don't need performance so much as versatility, but with the option to keep up with a serious cycling group doing 100km.
Also, something understated (less likely to be stolen?) would work in my favour.
I would appreciate any advice you can provide to help me make this decision.
