+44 (0) 208 5496001 is the number of their (UK) service centre. They should be able to advise on suitable replacements - for instance is it a 1 1/4 - 1 1/8 headset? Or it may ne a 1 1/2 - 1 1/4 from what I read. They also used some proprietary (own design) headsets some years - the i-Lock. So best contact them.

I got a reply from Canyon over the weekend. They say the only option is to buy the full headset at just under £600

they'll be standard sizes, but unless someone can be more helpful than canyon (who are not being helpful!) you are stuck with buying a new onemy bike - faster than god's and twice as shiny0

This is from a 2011 catalogue so maybe not to be trusted but

Thanks for the info.
So if the two bearings are:
AC3748 = 48 mm x 37 mm x 7 mm
61707 = 35 mm x 44 mm x 5 mm
Does that mean I just need to source two with identical dimensions?0 -
yes, but you need to add 2rs/rs so that you get sealed bearings
